Perhaps there's a call for the brands to provide the training - if they care about their brand's perception they ought to be making sure it's served properly.

I think you covered most of it, but I'd like to reinforce, serve good coffee.

We've all been served a coffee that can put us off a brand, until one day you try a cup and find out it tastes great; because where you got served knows how to care about the coffee they make.

The chains take care of this with training: measuring out the coffee, making sure the machine is set right, checking the temperature of the milk, cleaning the steam-arm... it's not rocket science, but there is an art to it, and it only takes caring about the product to get there.

In Prague in particular, service is the key ingredient that will make me go out of my way to go to a place. A coffee place in particular.

Care, and they will come. For the most part. And you don't need to be an international chain to get my business and recommendation. Just care about the product and the customer.

That's true of all business types, not just great cafes.
